It's a rare week when I find myself thinking "it's only Wednesday?!". Between classes & checking on the "kids", I've driven more in the last couple days than I do most months. :guilty face: Feeling capable is awesome, but I miss my partner...& my bike.
Flying solo, I wasn't looking forward to much except my menu for one & eating super clean. After finishing off a jar of nut butter & savoring multiple meals of avocado toasts...maybe foods of convenience are more my thing this week. Fortunately we had pesto leftover from the weekend. Not much to it: a couple cups of spinach, a couple cups of fresh basil, garlic, juice from a lemon, 1/4 cup cashews, & dried basil to amp up the flavor.
Pickling cucumbers are my favorite - especially crisp & refreshing - & not what I usually think to use in even raw pasta. I think I prefer them to zucchini now. Toss in sliced baby romas & let the flavors marry for awhile. Pretty low key, plus leaps & bounds more nourishing than pb-stuffed dates.
