We just returned from an especially beautiful & somewhat indulgent, extended-weekend wedding. The food was too amazing to pass up, & who says no at a whiskey bar? Home again, the counter bowls are filled with fruit & the fridge is loaded with greens. Surprisingly, we feel pretty good after our travel, but we're anxious to get back to clean eats. Even more surprising is how much I'm looking forward to my dinner salads.
Before our trip, I was struck with the realization of how to actually enjoy a huge salad for dinner every night. Sometimes, just the right variety of salad toppings will do; but day after day, salads start to get...meh. Creating delicious dressings is my trick to keeping them full of flavor. Since I'm still trying to avoid a lot of overt fats, I've been leaving the olive oil out & playing with a lot of other combinations. Fresh herbs. Citrus juices. Seeds.
Dressings also have to be about the easiest & quickest thing to whip up. Just throw the following in a blender, tweak the amounts to suit your taste, & wait for your taste buds to sing to the tune of a not-so-boring salad:
- 1/4 cup hemp seeds
- 1/2 cup orange juice
- 1/4 cup lemon juice
- 1/4 cup scallions, chopped
- 1/2 cup dill, chopped
- 1 - 2 T poppy seeds, optional (after blending the above, add poppy seeds last with a couple short pulses to keep them mostly whole)
